Everything Curry is O Cook Shop's mixed curry. One curry base, more than one protein, served together instead of split across separate plates. The kitchen named it, and the name does most of the explaining.
What is Everything Curry at O Cook Shop?
O Cook Shop calls one of its curries Everything Curry. The name is the hook and the description at the same time, which is rare and useful.
The idea sits inside the word. A curry that does not restrict itself to one protein, built on a single base and then loaded up.
Mixed pots are old in Caribbean cooking. A household curry got whatever the household had that week, and nobody apologised for it.
It reads as generous rather than clever. That is the whole appeal of the name.
You order it when you cannot choose. That is not indecision. That is a strategy.
What does everything mean on a curry plate?
Nothing on a curry plate is decoration. The gravy is the dish, and everything else is a way of getting gravy into your mouth.
More proteins means more surfaces for that gravy to cling to, and more textures inside one container.
Goat gives you gelatin and a bone-deep flavour. Chicken gives tenderness. Shrimp gives sweetness and speed.
Those three cook at completely different rates, which turns a mixed curry into a sequencing problem for whoever is at the stove.

How is Jamaican curry different from Indian curry?
Colour first. Jamaican curry powder leans hard yellow, and the finished gravy shows it.
Pimento is the real tell. Allspice does not appear in Indian curry powders, and it defines the Jamaican one.
Heat comes from scotch bonnet rather than dried red chilli, which changes the shape of the burn as much as the level of it.
Scallion and thyme go into the pot. That is a Caribbean habit and it does not come from anywhere else.
The method differs too. Jamaican curry usually starts by burning the powder in hot oil before anything else goes in.

Why is Jamaican curry cooked so long?
Because the cuts used reward it. Goat, mutton, shoulder, anything with connective tissue running through it.
Collagen turns to gelatin at low heat over hours. There is no shortcut and there never has been.
The gravy thickens from the meat itself rather than from flour. That is why it coats a spoon the way it does.
Curry also tastes better the next day, once the spices settle and the fat redistributes.
A fast curry is a different food. Not worse, just not this one.
Why does mixing proteins change a curry?
Each protein renders differently and all of it ends up in the same gravy.
Bone-in meat contributes collagen. Collagen is why good curry gravy clings to rice instead of running off it.
Seafood releases salt and sweetness quickly, which lifts the whole pot early.
The gravy at the end of a mixed pot tastes like none of the parts on their own.

When is a single Jamaican curry the better order?

What goes under a curry like this?
White rice is neutral and lets the gravy be the loudest thing on the tray.
Rice and peas brings coconut and a little sweetness, which takes the edge off curry heat.
Ground provisions soak differently. Yam, green banana, boiled dumpling, all denser than rice and all slower to give in.
Bread or roti if you would rather scoop than spoon.
Do not drown the starch. Gravy should coat it, not float it.
How hot is Jamaican curry usually?
Warmer than most people expect and milder than jerk usually lands.
The heat comes from the pepper, not the powder. Curry powder on its own carries almost none.
A whole scotch bonnet in the pot perfumes without punishing. Chopped pepper is a completely different decision.
Coconut milk is the standard brake, and there is a shrimp version built entirely on that idea in the coconut-softened shrimp curry option.
Ask rather than assume. Heat level is a house decision and it varies.
What is the difference between curry and stew in a Jamaican kitchen?
Curry starts with curry powder burned in hot oil. Brown stew starts with browning, usually with sugar caramelised in the bottom of the pot first.
Both end up as a long braise with gravy. The route there is what separates them.
Brown stew chicken takes its colour from burnt sugar and soy. Curry takes its colour from turmeric and nothing else.
Stew peas is a third thing again, thickened by the beans themselves and by spinners, the little hand-rolled dumplings that go in near the end.
A kitchen that can run all three is showing you range inside one pot family.
If you have only ever ordered one of them, order a different one next. The seasoning cabinet is shared. The results are not.
How do you reheat a curry without ruining it?
Low heat, covered, with a splash of water in the pan.
Microwaves work but they cook unevenly, and shrimp is the first casualty every single time.
Reheat the gravy and the meat together. Reheat the rice separately, with a little water and a lid on top.
Take any shellfish out and add it back at the very end. Thirty seconds is plenty of time.
Curry the next day is genuinely better than curry on the day. Nobody has ever said that about fried food.
What else can you do with curry gravy?
Pour it over fried chicken. That combination has its own following and its own page in curry gravy poured over fried chicken.
Put it over plain rice on its own, which is how a lot of people grew up eating it.
Save some for a next-day dumpling. Gravy improves overnight.
